For quite some time, Peruvian speciality coffee has been a staple at our roastery, serving as two iterations in our core range offering 'Pinnacle'; however, we're not typecasting this incredible origin, so we've jumped at the chance to offer Finca Bellavista, a much different beast to our previous offerings. 

Bellavista is one of the many Peruvian districts; neighbouring to the well-known coffee producing district, Huabal. Unlike Huabal however, Bellavista is set at a much higher altitude, allowing for much more complexity and growth for arabica coffee, than the lower, earthier Huabal. 

We've managed to secure a co-operative mix, identified as 'Finca Bellavista' from small producers in the region, all owning 1-2 hectares each, growing varietals of marshel, geisha and catuai. All small produces hand-pick their cherries, after picking, producers place cherries in a tank full of water to remove any floaters, then rest the cherries overnight in plastic bags to homogenize temperature and allow the coffee to rest before placing it on raised beds for 30–40 days. Once dry, producers bring their dry parchment to their warehouse in Jaén, where the coffee is cupped and graded and producers are paid on the same day based on the quality they bring.

As a natural, this is a lot more complex than previous offerings from Peru that we have added, with notes of pistachio and raisin prominent and a smooth finish of milk chocolate. This is definitely one that suits all-round brewing, however, if we had to choose, we'd put this through our stove top or any metal filter method.
