Decaf has had a huge rise in reputation in the last few years, yet, has remained an often overlooked part of speciality coffee collections. Well, rejoice! We love having an exceptional Decaf selection here at Podda & Wren. Quetzal is the latest in a long line of beloved offerings and is the culmination of work done in Mexico by Ensambles, a social project enriching lives in the often poorer states of Mexico, such as Chiapas and Guerrero, to reduce trafficking, narcotics trade and abuse.
Quetzal brings rich flavour to the cup, with heavy notes of Caramel and Dark Chocolate, along with a slight undertone of Hazelnut - creating a complex and punchy flavour, perfect for all brewing methods. These rich and complex flavour notes are in part thanks to the favourable growing conditions in this part of Chiapas, in the El Triunfo Biosphere Reserve - a haven of biodiversity and mineral heavy soil.
Mexican Mountain Water Process is the lesser known sidekick of Sugarcane Decaf (prominent in Colombia), processing caffeinated coffee and turning it in to 99.9% caffeine free coffee, with all the flavour of their caffeinated counterparts. We love both Mountain Water and Sugarcane due to their lack of carbon footprint, processing all aspects within their respective countries. Mountain Water in particular uses pure water from Pico de Orizaba, the highest mountain in Mexico in conjunction with natural charcoal carbon filters - this process is completed via a mixture of steaming and placing the coffee in pressurised chambers with the filters; these filters are removed once at capacity and then removed caffeine is recycled.
